Mais depuis la crise sanitaire et les mesures prises pour l’endiguer, certains soucis intrinsèques à la profession se sont retrouvés quelque peu exacerbés.   Les salaires sont pointés du doigt, mais également et surtout, l’apparente fragilité et instabilité de la profession. La résultante ? Le personnel qualifié a quelque peu déserté.   Les employés ne se sentent plus en sécurité, beaucoup commencent à « regarder ailleurs » : - - Les saisonniers sont restés chez eux. - De nombreux employés ont mis à profit le chômage partiel ou la fermeture de leur lieu de travail pour se reconvertir vers des métiers jugés plus « stables ». - Face à cette situation, les CV que reçoivent les propriétaires d’établissements sont ceux de personnes peu ou pas qualifiés.
